When you look back on your childhood and think about some of your favorite foods, who DOESN’T think of corndogs?! You either got your corndogs from the freezer, or at the beloved state fairs and carnivals. Both ways they were both satisfying and it was basically a staple food of childhood.
But have you ever had HOMEMADE corndogs?…. thought so! We’ll luckily I found this easy and “kid-friendly” recipe to make homemade corndogs, and I should mention that its also a healthier alternative versus the freezer or carnival corndogs (did I mention that each muffin is only 59 calories?!)! And as you know I am the Cupcake Chique, so of course the corndogs are in cupcake form!!! We obviously need to give credit to who ever came up with this delightful idea! Now let’s get those mixing bowls out, tie up our aprons, and get to baking!
This recipe calls for 28 mini muffins, so you will need a mini muffin, but if you don’t have one, fear not, you can always make these in regular cupcake size.
- 1 package mini hot dogs or regular hot dogs cut into 1 inch pieces
(make sure to buy fully cooked hot dogs, they will be in the oven for a very short amount of time)
For the cornbread mix:
- 1 cup all purpose flour
- 1 cup cornmeal
- 1 tablespoon baking powder
- 2 eggs
- 1 cup milk
- 1/3 cup unsweetened applesauce (vegetable oil or butter as a substitution are fine)
- 1/4 cup sugar
- 1/4 teaspoon salt
(if you’re in a rush, you can just whip up a quick batch using boxed mix!)
§ Pre-heat your oven to 400 degrees F
§ In a large mixing bowl stir together flour, cornmeal, salt, and baking powder
§ Gently mix together wet and dry ingredients, stirring only to coat. Be careful not to over mix here or you will have tough, dry muffins. Just like with biscuits/scones the key is to be gentle with the batter. There will be small lumps in your batter, and that is perfectly fine.
